Low recipes to help you lose weight
Try the following recipes to help you lose weight and save time in the week by cooking them in bulk.
Chicken Stew
Ingredients
mixture of chicken legs and thighs
potatoes
leeks
carrots
chicken stock
olive oil
salt/pepper
Chicken stew is a really cheap healthy dish which can be made in bulk and kept in the fridge or freezer and eaten as a healthy lunch or dinner.
Also being full of vegetables it helps you on your way to five a day.
Instructions
Pre heat the oven to 180 degrees and roast the chicken until piping hot all the way through and the skins are crispy then allow to cool slightly.
Meanwhile chop the carrots and the leeks as you wish and sweat in a pan using a small amount of olive oil.
Once the carrots and leeks are soft add the chicken stock and bring to a simmer.
Once the chicken legs and thighs have cooled, peel all the meat from the bone discarding the skins and any other fatty parts of the meat but keep the bones.
Add the shredded chicken to the pan along with the bones and leave to slowly bubble away for about an hour.
Once the liquor has reduced remove the bones and add the potatoes and leave to slowly bubble away for about an hour.
Add salt and pepper to taste and then serve,
You can allow the stew to go cold and reheat portion at a time.
Low Fat Chili
Ingredients
lean mince beef (but mince turkey could be used to make it even healthier)
large onion finely diced
garlic
chili con carne spice mix sachet
tins of chopped tomatoes
cooked kidney beans
olive oil
finely diced or grated carrot
finely diced celery
tomato puree
Chili is a really quick and easy dinner to make, and it can be made in bulk and kept in the freezer. By adding finely diced vegetables it makes it an easy way to eat more vegetables without even knowing. The longer you leave the chili the better it will taste; it can also be made the day before to really intensify the flavor.
Instructions
fry the meat and once cooked drain the fat off or dab with a paper towel.
sweat down the onion, carrot, celery and garlic on a medium heat and add the meat back to the pan.
Add the tinned tomatoes, tomato puree and the kidney beans along with the chili con carne spice mix sachet.
Leave all the ingredients on a low eat to bubble away and reduce.
